Alongside a flavourful and filling brEAThe quiche, the salad should be light and tangy. A baby spring mix salad with sliced cherry tomatoes, cucumbers, and radish, tossed with a vinaigrette plus fresh cracked pepper on top, is perfection!
Add some zing to your creamy brEAThe quiche experience with this sliced citrus salad. Choose three from the refreshing citrus family that includes oranges, grapefruit, pomelo, yuzu, and kumquats. Peel, thin slice, finish with ultra-fine sliced onions or mint.
Farm fresh veggies abound this season and are available at Farmer’s Markets throughout the Lower Mainland. Wash veggies, peel, chop, and dress with a squeeze of fresh lemon, drizzle of olive oil, and a pinch of salt. Beautiful and hearty!
If you want to add extra zip to the above salads – including the citrus salad - try this 3-ingredient dressing: 3 tablespoons of balsamic vinegar, 2 of Dijon mustard, and 1 of maple syrup. Whisk together. Use sparingly so are not to overpower the fresh nature of the salads.
